Wine is alive. The right conditions let a bottle evolve from promising to profound — the wrong ones stall that process or push it in the wrong direction. Here's what actually matters if you're building a cellar at home.
Temperature is everything
Keep your space around 13°C to suit all types of wine, most importantly with as little fluctuation as possible. Wide swings stress the wine and age it unevenly, cycling the cork through repeated expansion and contraction. Consistency matters more than hitting an exact number — a cellar holding steady at 12°C protects a bottle better than one drifting from 10°C to 14°C over the course of a day.
Darkness and silence
Light, especially UV, breaks down the aromatic compounds that give aged wine its complexity. Vibration disturbs sediment and can interfere with the same slow reactions. Use soft, indirect lighting, and keep the room away from compressors, washing machines, or anything else that vibrates continuously.
Humidity and airflow
Relative humidity about 50–70% keeps corks supple enough to hold their seal — too dry and they shrink, letting in air. Ventilation matters too: a sealed, airless room invites stale odours and mould, which humidity control alone won't fix.
